Made from fruit grown in 2020, our Classic Cuvée is crafted from a blend of Pinot Noir (42%) and Chardonnay (58%) grapes. This combines the structure and generous fruit character of the Pinot with an extra dash of finesse from the Chardonnay to create a classic blend. The wine was fermented and aged in steel tanks and bottled in June 2021. It was then left to bottle age on its lees for a minimum of 30 months before dégorgement.
Total production was just 3329 bottles
The wine is well rounded and generous with warm stone fruit (peaches, apricots) and honeysuckle aromas and demonstrates a pronounced autolytic character. There is a refreshing green apple acidity that offers lovely freshness and a balancing layer of mineralogy that adds to the complexity on the palate.

SERVING SUGGESTIONS
Lovely on its own as an aperitif or a sundowner and rather nice with traditional fish and chips. It would also work well with fresh asparagus; cured meats; sushi or tangy cheeses.
